Ingredients
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1/3 cup sliced mushrooms
- 2 1/2 cups reduced-sodium chicken broth
- 10 3/4 ounces reduced-fat reduced-sodium condensed cream of mushroom soup
- 1/4 teaspoon salt
- 1 teaspoon pepper
- 1 pound cooked turkey breast
- 6 ounces uncooked spaghetti
- 1/2 cup reduced-fat Monterey Jack, shredded
- 1/2 teaspoon paprika
Instructions
- Preheat oven to 350 degrees. In a small skillet saute the vegetables in butter until tender.
- In a large bowl combine the broth, soup, salt, and pepper.
- In a 2 1/2 quart baking dish coated with cooking spray, layer the chopped turkey, spaghetti and vegetable mixture. Pour broth mixture over the top.
- Cover and bake for 60 minutes or until spaghetti is tender, stirring once. Uncover and sprinkle with cheese and paprika. Bake 5-10 minutes longer or until cheese is melted.

- This was very flavorful and a nice big portion. We cooked the noodles seperately and next time I think we would either omit or cut down on the broth since it's not needed to cook the noodles.

- Thanks for the great recipe Twila! I didn't have the problem with the clumping noodles as mentioned earlier. Although, I did prep the meal last night and cook it this evening, so it has some extra time to absorb the liquid. I was a little short on turkey, so I measured out enough cottage cheese to compensate.

- The first time I made this the uncooked spaghetti really clumped together and I had to work to seperate and evenly mix when done. Flavor is really good so I made again. This time I pre cooked the noodles and baked for 30 min. and it was perfect!

- This was absolutely delicious. Very filling and hard to believe only a K3. Worked perfectly for afternoon K count.
