Vegetarian Tacos with Avocado

This simple favorite is now completely vegetarian. A great choice for the whole family.

  1. In a large non-stick skillet, heat the olive oil over medium high heat. Saute the onion, garlic, and green bell peppers 2-3 minutes or until soft. Add the ground cumin and cook 1 minute longer.
  2. Add the package of veggie ground beef to the pan and using the back of a spoon or fork break up the ground round. Saute until well browned. Sprinkle the taco seasoning over the "meat" and vegetable mixture. Add 1/4 cup of water to the pan and cook for 2-3 minutes or until sauce has thickened slightly. Keep warm.
  3. Wrap the tortillas in a paper towel and microwave 1 minute. Turn over and microwave another 30 seconds or until heated through.
  4. To assemble the tacos; layer 1 oz of cheese (2 tablespoons), with 2/3 cup of taco filling, 1 wedge of sliced avocado, chopped lettuce, and salsa.

  • These are super easy to make, deliciously spicy and you get to have avocados, AVOCADOS!! I had them on teh side with a dash of salt and lime. Mmmm....i wish i was eating them right now.....
