This simple favorite is now completely vegetarian. A great choice for the whole family.

Ingredients
- 1 teaspoon olive oil
- 1/3 cup chopped onion
- 2 garlic cloves, minced
- 1/2 green bell pepper, chopped
- 1 teaspoon cumin
- 12 ounces vegetarian ground beef
- 2 tablespoons taco spice mix
- 1/4 cup water
- 4 corn tortillas-6"
- 4 ounces shredded reduced-fat cheddar cheese
- 2 cups chopped romaine lettuce
- 1/2 avocado, cut in 4 pieces
- 1 cup salsa
Instructions
- In a large non-stick skillet, heat the olive oil over medium high heat. Saute the onion, garlic, and green bell peppers 2-3 minutes or until soft. Add the ground cumin and cook 1 minute longer.
- Add the package of veggie ground beef to the pan and using the back of a spoon or fork break up the ground round. Saute until well browned. Sprinkle the taco seasoning over the "meat" and vegetable mixture. Add 1/4 cup of water to the pan and cook for 2-3 minutes or until sauce has thickened slightly. Keep warm.
- Wrap the tortillas in a paper towel and microwave 1 minute. Turn over and microwave another 30 seconds or until heated through.
- To assemble the tacos; layer 1 oz of cheese (2 tablespoons), with 2/3 cup of taco filling, 1 wedge of sliced avocado, chopped lettuce, and salsa.
Tips
- When purchasing veggie ground round choose either the Smartlife brand or Yves veggie ground round. Both will work well for this recipe. Feel free to use fresh shredded cabbage, chopped jalapenos, fresh cilantro, or any other K0's that you love.

- These are super easy to make, deliciously spicy and you get to have avocados, AVOCADOS!! I had them on teh side with a dash of salt and lime. Mmmm....i wish i was eating them right now.....
