Grandma's recipe with none of the guilt.
- Preparation Time: 10 minutes

Ingredients
- cooking spray
- 1 1/2 pounds boneless, skinless chicken breast, cut into 2-inch pieces
- 1 cup chopped onion
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 teaspoon salt
- 3 tablespoons corn starch
- 4 cups chicken broth (99% fat free), divided
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 medium carrots, thinly sliced
- 1 1/3 cups Bisquick Heart Smart Mix
- 1/4 cup 1% milk
- 1 tablespoon chopped Italian parsley
Instructions
- Spray a large pot or Dutch oven with non-stick spray. Add the chicken and brown on both sides over medium heat, 2 minutes per side. Remove the chicken and set aside (it is not fully cooked and will be finished at the end.) Add the onions, celery, garlic and salt. Sauté over medium heat until onions are translucent, about 4 minutes (add 2 tablespoons of broth if needed.)
- In a small bowl whisk together the cornstarch and 1/2 cup of the chicken broth and set aside.
- Add the thyme, oregano, carrots and remaining chicken broth to the soup pot. When the liquid begins to simmer, reduce the heat to medium low and simmer for 5 minutes. Add the cornstarch slurry to the soup while whisking to prevent lumps. Allow to simmer for 5 more minutes. Stir the chicken back into the pot.
- In a medium bowl, combine the Bisquick and milk. Stir until it forms a ball. If there is not enough liquid, add water (1 tablespoon at a time) until the dough forms. Using a spoon, make 8 equal sized dumplings and add them to the simmering soup. Allow to simmer at medium low for 10 minutes, uncovered. Then cover the pot and simmer for 10 additional minutes. Sprinkle the parsley over the top and serve.
Tips
- If you want to add more K0 veggies, add them just before you put the dumplings on top, to keep them from getting overcooked.

- OMG OMG OMG - This was SOOOOO good!!! I was super stoked to realize that there were 3 of us eating this, there are 4 servings....which means I get it for lunch today!! The prep time was WAY off (because my chicken was frozen) - but it was WELL worth the wait!!

- I have made meatloaf before (it is a wonder I am still alive) but this was the best I have ever done and it was wonderful tasting! Using a food processor for the vegetables made it much easier to prep and the meatloaf sandwiches the next day were awesome! I misread the recipe and dumped ALL the garlic into the meatloaf but it turned out great! Will add even more garlic next time around.

- This recipe is better than any other Chicken and Dumpling recipe I've tried. I can't believe it's k-balanced! It does make a lot and is very filling, so be sure you're hungry. My kids only needed half a serving. It kept well in the fridge for a day or two and reheated well on 50% heat in the microwave.

- Very good. Nice to have a good ole favorite. Cooking time is more like 40 minutes, so give yourself some extra time.

- Try low or non-fat pre-made croissants. They are simply made and steam into pillows of joy!!!

- I liked this but I don't know if I'll make it again. Good comfort-style food when it's cold out. Not a good summer meal though. I'd suggest making the dumplings about half as big. Per the recipe they come out too large. Tasty but not sure it's worth the effort.
