Savory beef and noodles in a creamy sauce. A quicker & leaner version of the classic.

Ingredients
- 1 tablespoon olive oil
- 2 garlic cloves, chopped
- 2 cups thinly sliced mushrooms
- 1-medium onion, diced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- pinch cayenne
- 2 tablespoons all-purpose unbleached flour
- 2 cups fat-free beef broth
- 1 1/2 pound deli roast beef
- 1 pound dried egg noodles
- 3 tablespoon chopped Italian parsley
- 1 teaspoon kosher salt or sea salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon lemon juice
- 1 cup nonfat greek style yogurt
Instructions
- Put a dutch oven over medium heat and add the olive oil, garlic, onion, and mushrooms. Saute until the onions are translucent and mushrooms have softened. Add the thyme, cayenne, and tomato paste and mix well. Add the flour and cook briefly. Pour in the broth and whisk until the sauce beings to simmer and thicken slightly, about 10 minutes. Cut or tear the roast beef into bit size bits and add to the sauce. Reduce the heat to low.
- Meanwhile, in another large pot prepare the noodles according to directions. Cook until done but do not let them over cook. Drain the noodles well and add to the meat mixture.
- Gently stir in the parsley, salt, black pepper, lemon juice, and yogurt. Combine well. Keep the heat on low and let the stroganoff sit for 5 minutes before serving with your favorite K0 veggies.
Tips
- The K-count for 4 servings is K5.
- 1 pound of very lean and well-trimmed top sirloin or top round can be substituted for the deli-style roast beef.

- I also had a hard time believing this was a K3 after doing the math of my deli beef and egg noodles. It worked out to be 390 calories per serving so I counted it as K4. It was tasty though and it passed the kid test!

- I'm not quite getting the numbers to work on this recipe. If you take the total calories in a 16 oz bag of egg noodles it is 1167 and take the total calories in 24 oz of deli roast beef it is 1080. 1167 + 1080 = 2247 / 6= 374 calories. That is nowhere near 277 and is missing all the other ingredients. I'm not convinced this is really a K3 for 277 calories.

- This is a delicious stroganoff recipe!!! Fairly easy, I substituted beef round (sliced in thin strips) for the deli roast beef. It was very filling and only K3 count! This is instantly a new favorite of ours!!!

- This is one of my favorites. I used sliced roast beef from Costco deli packs and it's very flavorful and quick. This is a good recipe for winning over family and friends who don't think eating healthy can taste good and be filling.

- Very good and hearty! I can hardly believe so many noodles are allowed. I used an extra tablespoon of tomato paste to thicken and I also let the sauce simmer for about 25 minutes ... so it was nice and thick. Also, this is a ton of food, so I look forward to freezing and using later too!

- Not bad. I liked it; hubby found it a little bland. Easy to make; makes a TON! If you are single or just two of you, you'll have lunches for days. Here's a tip to make your sauce thicker. After you add the beef broth but before adding the beef, let it reduce. The longer you let it simmer, the thicker your sauce will be and the more concentrated & yummy it will be.

- it is 1 pound of dry noodles. We are able to calculate the change in nutritional value once cooked. Egg noodles have more protein than traditional dried pasta.

- This was really very good - and I don't like stroganoff, but I made it for my husband. It seemed like a lot of noodles though. Is that 1 pound dry - or a 16 oz package of noodles? Or maybe I should have done one pound cooked - but then how do I know how many to cook? I'm not in the kitchen much anymore so bear with me! :)

- Tastes great, but I was dissapointed because the sauce never thickened. Maybe it's supposed to be thin and runny, but it would be better as a thicker sauce.

- This was amazingly tasty! Tho' I had to substitute the dried thyme with fresh chopped dill for authentic stroganoff flavor

- This recipe was actually very tastey! I am used to the classic made with beef tenderloin, so I felt like I was making college food with the deli roast beef. Quick, easy and tasted good!
