Everyone loves meatballs and this easy version of Sopa de Albóndigas is a great way to eat them. If you’d like the soup spicy, add canned or fresh jalapenos to the broth.

Ingredients
- 1/2 slice whole-grain bread
- 3/4 pound ground turkey breast (99% fat-free)
- 1 egg white
- 1 teaspoon dried oregano
- 1 1/2 tablespoons ground cumin
- 3 tablespoons fresh cilantro, divided
- 1/2 teaspoon kosher salt or sea salt
- 1/4 teaspoon ground black pepper
- cooking spray
- 1 cup chopped white onion
- 1/2 cup thinly sliced carrot
- 1 can (4 ounces) diced green chiles
- 6 cups low-sodium chicken broth
- 2 cups drained canned golden hominy
- 1 can (8 ounces) tomato sauce
- 1 medium zucchini, diced
Instructions
- In a food processor, process the bread into fine crumbs. Transfer to a large bowl and add the turkey, egg white, oregano, cumin, 1 tablespoon of the chopped cilantro, salt and pepper. Using wet hands, shape mixture into 16 1-inch meatballs.
- Spray a large saucepan with the nonstick cooking spray and warm over medium-high heat. Add the onion, carrot and chiles and cook until the vegetables are softened, about 5 minutes. Add the broth, hominy and tomato sauce and bring to a simmer. Add the meatballs and simmer 5 minutes. Stir in the zucchini and cook 3 to 4 minutes or until tender and the meatballs are cooked through. Stir in the remaining 2 tablespoons cilantro and season with salt and pepper to taste.
Tips
- Serve with K0 Radish, Celery and Cucumber Salad.
- *Hominy is corn kernels from which the hull and germ have been removed. When dried hominy is ground, it’s called grits.

- Way too much cumin in the meatballs. I reduced it to 1 TBSP and it was still totally overpowering. Also didn't love the texture of the hominy. Are there any substutions for that? Like brown rice or potato? I would try it again with little or no cumin and a different starch.

- This is a wonderful recipe. I make traditional Mexican food all the time, and this is a recipe I used even before Kinetix. I would reccomend a variation of swapping the cilantro for fresh mint. It makes a wonderul change in flavor. You can also swap out 2 cups of small cubed potato for the hominy, which often times, has added salt when canned.

- Great soup and well liked by the guys I work with. Being pinched for time, I used Trader Joes turkey meatballs - baking them first. Thanks for the recipe.
