Migas

Migas are very similar to chilaquiles –basically eggs mixed with corn tortillas and Mexican flavors. Muy Delicioso!

  1. Preheat oven to 350°F. Spread the tortillas on a baking sheet and bake until crisp, about 10 minutes. Break up the tortillas into 1 to 2 inch pieces.
  2. Meanwhile, spray a large skillet with cooking spray and warm over medium-high heat. Add the onion, turkey, garlic and peppers and cook until onion is pale golden, about 5 minutes. Stir in the tomatoes and stir 1 minute.
  3. Stir in the tortillas, eggs, cheese, salt and pepper and cook until the eggs are just set and the cheese has melted about 5 minutes. Divide between six serving plates and top each with a tablespoon of sour cream and sprinkle with the cilantro.
