Migas are very similar to chilaquiles –basically eggs mixed with corn tortillas and Mexican flavors. Muy Delicioso!

Ingredients
- 6 6-inch corn tortilla-6", cut into 1-inch pieces
- cooking spray
- 1 cup chopped white onions
- 1 cup chopped smoked turkey
- 3 garlic cloves, minced
- 1-2 jalapeño peppers, seeded and minced
- 6 plum tomatoes, coarsely chopped
- 3 cups egg substitute
- 1 cup shredded reduced-fat cheddar cheese
- 1 teaspoon kosher salt or sea salt
- 1/2 teaspoon ground black pepper
- 6 tablespoons fat-free sour cream
- 2 tablespoons chopped fresh cilantro
- hot sauce, optional
Instructions
- Preheat oven to 350°F. Spread the tortillas on a baking sheet and bake until crisp, about 10 minutes. Break up the tortillas into 1 to 2 inch pieces.
- Meanwhile, spray a large skillet with cooking spray and warm over medium-high heat. Add the onion, turkey, garlic and peppers and cook until onion is pale golden, about 5 minutes. Stir in the tomatoes and stir 1 minute.
- Stir in the tortillas, eggs, cheese, salt and pepper and cook until the eggs are just set and the cheese has melted about 5 minutes. Divide between six serving plates and top each with a tablespoon of sour cream and sprinkle with the cilantro.
Tips
- You can substitute smoked ham for the turkey if you prefer.
